Spinach Squares
Cheri Clotiaux Stringer (originally from Southern Living)
Yield: 8-10 servings
Originally tried this for a Clotiaux Thanksgiving because it was a “green” and could be prepared ahead of time, frozen and then reheated. Super easy! (Dec 1996)
4 Tbsp butter
3 eggs
1 cup flour
1 cup milk
1 tsp salt
1 tsp baking powder
20 oz drained, cooked spinach (or 10 oz broccoli and 10 oz spinach)
1 Tbsp onion, chopped
1 lb shredded Cheddar cheese (or 1/2 lb Cheddar and 1/2 lb Swiss)
Preheat oven to 350˚F. Put butter in 9x13-inch pan or Pyrex casserole. Melt in oven, then remove.
In large bowl beat eggs well, add flour, milk, salt, baking powder. Mix well. Add cheese and spinach.
Spoon into baking dish and bake for 35 minutes. Remove and let cool for 45 minutes. Cut into 2-inch squares.
NOTE: Can be frozen, thawed and reheated at 325˚F.
