Turkey Marinade
Cheri Clotiaux Stringer (originally from Bon Appetite Magazine)
Yield: marinade for 1 turkey
Found this in the early to mid ’80s. It was supposed to be used in conjunction with putting the turkey in a brown bag during cooking. I usually use all of the marinade on the turkey and baste with the drippings produced during baking. Terry used the marinade and smoked a turkey one year, also. Be aware, this will really smell up the house ... before and after cooking! (Dec 1996)
1 cup corn oil
1 1/2 Tbsp Beau Monde Seasoning
1 1/2 Tbsp salt
2 Tbsp paprika
1/2 tsp pepper
2 Tbsp minced fresh garlic
Use about half of marinade under the skin of turkey. Marinate turkey one to 3 days in refrigerator.
Bake according to size of bird. Use remaining marinade as a basting liquid when turkey is cooking.
