Kelly Jenkins Howard (originally from allrecipes.com)
Yield: 6 servings
I get daily recipes from allrecipes.com and this one made the cut! I converted it into a casserole and its now a weeknight favorite. (Nov 2010)
4-6 flour tortillas
2 Tbsp vegetable oil
1 small onion, chopped
1/2 red bell pepper, chopped
1 tsp garlic, minced
1 (15oz) can black beans, rinsed, drained
1 tsp jalapeño peppers, minced
3 oz cream cheese
1/2 tsp salt
Shredded cheese, for topping
2 Tbsp fresh cilantro, chopped
2 Tbsp vegetable oil
1 small onion, chopped
1/2 red bell pepper, chopped
1 tsp garlic, minced
1 (15oz) can black beans, rinsed, drained
1 tsp jalapeño peppers, minced
3 oz cream cheese
1/2 tsp salt
Shredded cheese, for topping
2 Tbsp fresh cilantro, chopped
Cook onion, bell peppers, garlic, jalapeño in oil for about 2 minutes or until onion is soft. Pour beans into skillet, cook 3 minutes.
Cut cream cheese into cubes and add to skillet with salt. Cook for 2 minutes stirring occasionally, stir cilantro into mixture. Spoon mixture into tortilla and line up in a baking dish.
Top with any remaining black bean mixture and shredded cheese. Bake covered at 350˚F ’til heated through.
NOTE: Add browned ground beef for a heartier version.
