Spicy BBQ Sauce
D. Stephen Steakley, Jr. (originally from Mary Evelyn Eubanks Voss)
Another bbq sauce — can you tell I’m a fan? This one came from my great-aunt Mary, who claims it’s from Louisiana, so I thought it was fitting for the Clotiaux Cookbook. Great on broiled chicken or steaks on the pit. This makes a lot, but keeps well in the refrigerator. (Nov 2010)
1 qt Wesson salad oil
2 lbs onions, chopped (or less)
1 bottle Lea & Perrins® Worcestershire
2-3 cloves garlic, optional
1 bottle Heinz® Steak Sauce Salt and pepper to taste
1/2 bottle Louisiana® Hot Sauce
1 heaping tsp sugar
Combine ingredients and cook slowly until onions are done.
Pour off oil and add butter to taste.
Use the oil to baste barbecue. Add one bottle of catsup, if desired.
