As my mom knows all too well, I love fruit bread — I always requested strawberry cake for my birthdays. This is a wonderful bread — super moist and sweet! (Nov 2010)
3 cups all-purpose flour
1 tsp soda
1 tsp salt
1 Tbsp cinnamon
2 cups sugar
4 eggs, slightly beaten
1 1/4 cups vegetable oil
2 cups frozen strawberries, thawed
1 1/4 cups chopped pecans
Strawberry Spread
1 (8oz) pkg cream cheese
1/2 cup strawberries
2 Tbsp powdered sugar
1 tsp soda
1 tsp salt
1 Tbsp cinnamon
2 cups sugar
4 eggs, slightly beaten
1 1/4 cups vegetable oil
2 cups frozen strawberries, thawed
1 1/4 cups chopped pecans
Strawberry Spread
1 (8oz) pkg cream cheese
1/2 cup strawberries
2 Tbsp powdered sugar
Preheat oven to 350˚F. Combine first 5 ingredients in a large mixing bowl; add remaining ingredients and mix well.
Spoon into two greased 9x5x3-inch pans. Bake for 1 hour.
Cool in pan for 5 minutes. Remove from pans; cool completely on a wire rack before slicing.
Strawberry Spread: Blend ingredients together and spread on bread slices to make party sandwiches.
