Lemon Chicken
4 servings
Alyson Stringer (originally from Annabelle Fairchild Stringer)
My Stringer grandmother, we call her Middie, fixes this every time I visit — she knows it’s one of my favorite comfort foods. This is also one of my go-to “doorstep” recipes — I often take this to friends’ houses in times of need, e.g. new baby, death in the family, etc.
4 chicken breasts
1 (10oz) can cream of chicken
1 small can water chestnuts
1/2 cup lemon juice
1/2 cup (1 stick) butter, melted
3 Tbsp poppy seeds
1 tsp black pepper
Preheat oven to 350 degrees. Spread the chicken across the bottom of a 9x13-inch baking pan.
Tip: If you’re dropping this off at a friend’s house, put cracker crumbs and poppy seeds in a bag with instructions to spread across top before baking.
